"Lomo Saltado" is a classic Peruvian dish that fuses old and new was of cooking. When I make my "Lomo Saltado" for the kids, the platter is empty in seconds, it's that good. The stripes of beef are stir-fried with hearty chunks of tomato, onions, and baby roasted potatoes instead of french fries for a healthier version.
