“Lomo Saltado” with Sliced Beef, Sautéed Tomato, Carmelized Onion and Roasted Pee Wee Potatoes
"Lomo Saltado is a classic Peruvian dish that fuses old and new ways of cooking. When I make my Lomo Saltado for the kids, the platter is empty in seconds, it's that good. The strips of beef are stir-fried with hearty chunks of tomato, onions, and baby roasted potatoes instead of French fries for a healthier version. The finale is the succulent pan juices from the meat are drizzled on the whole dish. Viva la Vida!"- Cat Cora
