Bacon, Cheese, and Ketchup Meatloaf with Barbecue Baked Beans and Mashed Sweet Potatoes

My meatloaf is an homage to what my mom used to cook for me when I was a kid. It’s nearly her recipe, just jazzed up a bit with some sharp cheddar cheese and yummy bacon. (You can’t go wrong with bacon.) I’ve accompanied it with some smoky, savory, and sweet barbecue beans and creamy mashed sweet potatoes. It’s the perfect plate of comfort food for a school night or any night!

Carolina Barbecue Chicken Leg Quarters with Jalapeño Cheddar Cornbread, Creamed Kale and Spinach topped with fried Shallots

Barbecue flavors and preparations vary greatly throughout the United States. And to me, they’re all mouthwateringly great. But having spent a large part of my life in the Carolinas, I am partial to Carolina barbecue. Mustard and vinegar are two of my favorite barbecue ingredients. I just love how their tang and zing offset the requisite sweetness. And I couldn’t serve up BBQ without some of my favorite sides, dressed up with a little extra goodness. I’ve added some heat and cheesiness to the cornbread and a little oniony crunch to my creamed greens. It’s comfort food at its best! —Daina Falk

Buffalo Chicken Mac & Cheese with Roasted broccoli and garlic chips

Buffalo wings meets macaroni & cheese. Need I say more? But if I had to, think of the Buffalo wing tanginess you know and love incorporated into the delightful ooey gooeyness of mac & cheese, all complemented perfectly by the garlicky crunch of roasted broccoli. Yum, yum, and yum!

Brat Potato Dog with Green Bean Fries

This dish is a fun riff on stadium fare. It’s like bringing the stadium home but, I’d argue, better. I took good ol’ beer brats with peppers and onions served on a bun, and put what I’d like to think is an awesomely indulgent spin on ‘em. I’ve replaced the bun with my version of a loaded baked potato, and I’ve drizzled the pepper and onion-topped brat with a beer cheese sauce. It’s a whole lotta yum that I think you’ll love. And on the side, I’m serving up fries—green bean fries! They’re something a little different and a lot delicious. —Daina Falk
