A premium Colorado Native Foods fire-grilled chicken breast served with an Artichoke-Lemon Sauce. Accompanied Za’atar Oven Fries and Moroccan Ratatoullie.
Charbroiled Chicken Breast – Our chicken is all-natural, locally sourced and 100% antibiotic, added hormone and steroid free and raised on family farms in cage-free environments. We believe this humane treatment, and respect for our environment comes through in superior flavor. Chicken is a great source of lean protein and the amount of saturated fat and cholesterol found in chicken is much lower than in red meat. Making it an excellent addition to a balanced diet. The American Heart Association has advised consuming chicken or fish instead of red meat for a lowered risk of cholesterol and subsequent heart disease development. Figs are a good source of potassium, a mineral that helps to control blood pressure and a good source of dietary fiber which has a positive effect on weight management.
Artichoke-Lemon Sauce – A healthy zesty artichoke-lemon butter sauce. Artichokes are a superfood in every sense of the word. The phytonutrients in artichokes provide potent antioxidant benefits, and a 2006 study conducted by the US Department of Agriculture and published in the American Journal of Clinical Nutrition showed that artichokes provide greater antioxidant benefits per serving than many other foods traditionally considered to be antioxidant-rich such as dark chocolate, blueberries and red wine. They also lower cholesterol, improve liver function and prevent cancer and protect against free radicals.
Moroccan ratatouille – what distinguishes our ratatouille from the traditional French ratatouille is dates and apricots join yellow squash and red bell peppers. Yellow squash is high in manganese, a mineral which helps the body process fats, carbohydrates, and glucose.
Za’atar Oven Fries – Sumac, Sesame Seeds, Sea Salt – Eastern Mediterranean za’atar is an intensely aromatic and ancient spice blend and condiment. The mixture is traditionally made with dried herbs such as marjoram or thyme (the Arabic word za’atar, pronounced ZAH-tahr, also means “thyme”), we make ours with sumac for a vibrant twist. The sumac brightens everything up with citrus tones, but it’s also earthy, it makes our fries pop and it goes extremely well with the nuttiness of sesame seeds. Our fries come out of the oven so are a healthy way to enjoy a favorite comfort food. When you take away the extra fat and deep frying, potato is an exceptionally healthful low calorie, high fiber food that offers significant protection against cardiovascular disease and cancer and are very good source of vitamin B6 and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber, and pantothenic acid. Potatoes also contain a variety of phytonutrients that have antioxidant activity. Among these important health-promoting compounds are carotenoids, flavonoids, and caffeic acid, as well as unique tuber storage proteins, such as patatin, which exhibit activity against free radicals.
